chocolate cereal cupcakes

Hi guys! Man, I love Pinterest. This is what happened today: 1) I got hungry. 2) We had no food. 3) I got on Pinterest. 4) I did something out of the ordinary. I baked. On my own! I AM SO PROUD! Just look at these delicious cupcakes!!

So, first, creds to The Pinning Mama, who I first found the original recipe from (via Pinterest, of course.) She calls them ‘muffins,’ but they’re so sweet and made more of cupcake ingredients, they just don’t have frosting, they have chocolate cereal. 😉 Her recipe called for fruity pebbles, but I noticed the cereal she used was the same flaky-kind of chocolate cereal I had. So I substituted the fruity pebbles for the chocolate cereal. (I used the Mom’s Best Cereals ‘Crispy Cocoa Rice,’ but you can use any cereal like this one. =) )

Ingredients:

2 cups all purpose flour
3 tsp. baking powder
1/2 tsp salt
1/4 cup butter, softened
1/2 cup sugar
1 cup milk
1 cup chocolate cereal

Directions:

Okay, peoples, grab your spatula! (Or spoon. I don’t think you need a spatula for this recipe.)

  1. Mix the flour, baking powder, and salt in one bowl.
  2. Then mix the butter and sugar together in a seperate bowl until it’s a creamy, frosting-like consistency.
  3. Mix the two bowls together and add the milk a little bit at a time, stirring it all in. (Make sure there aren’t any clumps!)
  4. Then dump in the cereal and keep stirring until the cereal is evenly distributed into the mixture. (At this point, go ahead and preheat your oven to 400 degrees.)
  5. Grease a 12-cup cupcake tin and fill each cup half way with the batter. (If you don’t have baking spray, drizzle a little grape seed or vegetable oil in each tin.)
  6. Bake for about 15 minutes or until you can poke a fork or toothpick in one and it comes out clean. =)

The recipe is so simple, isn’t it? It probably took me less than 20 minutes to prepare the recipe and then only 15 for the cupcakes to bake.

One quick tip my mom told me once is if you don’t have baking spray, I used a teaspoon measuring cup and drizzled a little grape seed oil (you could also use vegetable oil), on the pan, and rubbed it around the edges so the cupcakes would come out easier. (I think it works better than baking spray, actually!)

One thing I will definitely do differently next time is add a little more milk or butter. I think they were a little bit dry, so I’ll try and experiment with the recipe a bit more next time. Also, I ended up keeping them in the oven a few minutes longer than I originally did, but 15 minutes was just the right amount of time!

  1. The story my cousin and I wrote is about three sisters who get stranded on an island. Only they survived the crash( they were in a private jet). That’s as far as we got. Does it sound good? We only wrote two chapters. Its so so cool you get to go to her dream workshop! I’ll bet you have loads of fun. It would be cool if she could sign your books while your there. You get to meet a real author!! I still have to order her books. Its way cheaper on thrift books, but I know she has been struggleing money wise so I’m going to order them on amazon. The cupcakes look really good. I hope I get a blog some day too. I’m sure I’ll really like the guest post on both blogs. One thing I really like and wish you would do more of is stacking the shelves. Read any good books lately?

      I really can’t waiiittt! Seriously, why can’t May come sooner??! 😀 Aww, that’s so sweet! I read that blog post, and the one about buying books new, so it made me want to order both of her books again, even if I already have the two! (Ha. I probably should, so I can lend one book to my friend and still have it on my bookshelf. 😀 )

      The cupcakes are delicious! I’m thinking I’m going to make the MDBC recipe soon. I can’t believe I haven’t before.

      I really should do more Stacking the Shelves. I guess I stopped because I don’t always buy or get books every single week. I normally stock up on five or six good books and then not buy anymore until I finish the ones I’ve got. The next time I get some books, I’ll have to do one! 🙂

      I just finished an amazing book – The Corner of the Universe by Ann M. Martin. The review will be posted on Wednesday. Also, the book I’m reading now – OMG. I’m not even half way in and I love it so far! It’s called The Other Half of my Heart. (Look to the right of the blog, all the way down, and click on the cover of the book, and you can read what it’s about.) 😉

      1. I just wrote a really long comment but I forgot to put in my name so I lost it :(. The other half of my heart sounds good. Sometimes I wish I have a twin. I Think it would be cool. Usually Ann M. Martin’s books are good. I’ll have to look that one up. Do you know if rain reign is good( I think thats the title)? My library has it but I don’t know if its good. The cookies are really good. They are already gone ;p. I Love sweets so I HAD to make the cookies they talked about in the book so much. I recently read Understood Betsy( that’s the book the MDBC is going to read in the 7 book). It was really good and really cute.I’m reading the apothecary at the moment. I’m also listening to the maze runner series. I’m on book four. I may send you the first chapter my cousin and I wrote together today or tomorrow. I’ll see if I have time to ask my mom if I can.

        1. Aww. I hate it when I that happens. I wish I had a twin, too – I wonder what that would be like. I’ve never even heard of Rain Reign! OMG. I just looked it up and it sounds amazing. Have you read The Main Street series by Ann M. Martin? They’re really good. Kind of like MDBC. Haha, the cookies would be gone in my house, too!! I should read Understood Betsy sometime, too. I have so many books I want to read, plus books required for school, I can’t keep track of them all! I’ve also wanted to read The Maze Runner, too. I saw the trailer in the movie theater a month or two ago – isn’t it going to be a movie? Is it good? I wasn’t sure if it was my taste… I’d love that! Let me know if you can. 🙂

          1. I plan on getting Rain Reign at the library. I will tell you if its good. I have not read the main street series. I’ll look into them. I have a list of books in my notebook that I should read or I want to read. Have your read the whole Giver quartet? If not you should because they are all amazing. They make more sense if you read them in order but you can read it out of order( kind of like the MDBC). My favorite book in the series is the last one. It was So good. I really liked the maze runner but I don’t know if you would like it. It contains some violence and could be scary at some points for some people. I dont get scared easily and I didnt reall find it scary but I know some people scare easily. I really like the series. It takes a while to get into but once you do you get hoooked. I’m on the third book in the series. It is a movie but I have not seen the movie. I have it on our netflix list though so I should get it soon. I will ask my mom today if I can email you. I hope she says yes.

I’ve only read the first one – my mom and I read it together, but we have the whole quartet, we just haven’t sat down to read the next one together yet. 🙂 I think I’m going to sit down and make a list of books I want to read, too.   2. Ooh, the cupcakes look really tasty. I would love to see more recipes on the blog, partly because food tastes good and partly because I just really like looking at pictures of food. That’s not weird, is it? I aspire to be a good food photographer. I also posted a recipe once in December, and I really enjoyed making it so I want to post more recipes on my own blog. It’s just so difficult to come up with original recipes that taste good.

    1. Haha, that’s not weird at all! Although I do not allow myself to look at food online when I’m hungry… lol! Really? I never saw it! I’ll have to go and read it on your blog. I really want to cook/bake more, but it is hard to come up with your own recipes. 🙂

  3. The maze runner movie is on dvd netflix not instent netflix. I really like the giver quartet. You should read it soon. I’ll ask my mom in a bit. Probably when she is done teaching my sister. She will probably say yes. I just don’t know how to ask her. Any advice? I don’t judge violence very well since I don’t mind it very much. The books violence is no worse then the hunger games if you have read those. Its not very detailed. I recommend renting it at a library just to make sure you like it. I would hate if you bought it and really didn’t like it. I’ll tell you about any good books I read or get at the library. The apothecary is good so far.

      Can I admit something? I’ve never read The Hunger Games. Or Divergent, for that matter. A couple years ago, when I was 10/11, all my friends were reading it, but I had no interest. And I don’t think my mom wants me to read it. What’s The Apothecary about? 🙂

      1. The apothecary is about a girl who has to move to london because the government are following her parents. It also has a lot to do with an apothecary. I’m not going to give to much away ;). I’m horrible at asking questions. So I put off asking my mom. Yesterday was not a very happy day. Do you have any advice on asking my mom? I read the hunger games a while ago. I liked it but I’m not in love with it or anything. I Have not read divergent but my friends are tellig. Me to read it. I might give it a try in the future. I got a bunch of cool books at the library and I’ll tell you if any of them are good. One series I really like is the copernicus legacy. You should check it out. I really really liked the first one and I got the second one at the library yesterday.

        1. Oh and the apothecary has a little to do with stuff that seems like magic ;). Its so good so far. I may have to buy the second book if it continues to be so good ;).
